DEVIL’S FOOD COOKIES
1 pkg. any dark chocolate cake mix
1/2 c. butter, melted
1 egg, slightly beaten
FILLING:
2 c. powdered sugar
1/4 c. shortening
1/2 tsp. vanilla
1 egg white
Oven: 350º

Heat oven to 350 degrees. In large bowl combine all cookie ingredients. Mix well. Firmly shape dough into 1-inch balls. Place 2 inches apart on parchment paper lined cookie sheets. Bake for 9 to 13 minutes or until set. Remove from cookie sheets and cool completely (just slide paper and all off pan. Cookies will cool on paper without sticking.)
In small bowl combine 1/2 cup of the powdered sugar with shortening, vanilla and egg white; blend well. Add remaining powdered sugar; beat until smooth and creamy. Spread heaping teaspoon of filling between 2 cookies (I use a pastry bag and pipe it); repeat with remaining cookies. Yield: 24 sandwich cookies. Allow to sit uncovered until filling is set.
