Applesauce Gingerbread
2/3 cup solid vegetable shortening
2/3 cup granulated sugar
2 eggs
1 cup molasses
3 1/2 cups sifted cake flour
2 teaspoons baking soda
2 tablespoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon salt
1 1/3 cups applesauce
Oven: 350 °
Cream together shortening and sugar until light.  Beat eggs and molasses together, mixing well.  Sift together flour, soda, cinnamon, ginger and salt. Add to creamed mixture alternately with applesauce, blending well after each addition.  Bake in greased 9 x 13-inch pan approximately 45 minutes. Cool slightly before removing from pan.
