Apple Bundt Cake
4 eggs
1/4 cups vegetable oil
1 cup applesauce
2 cups granulated sugar or SplendaŽ
2 cups plain all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
3 cups finely chopped apple
1/2 cup chopped walnuts (opt)
1/2 cup dark seedless raisins (opt)
Oven: 350°

In large mixing bowl, combine the eggs, oil, applesauce and sugar or SplendaŽ; beat till smooth.  Sift together dry ingredients and beat into egg mixture, mixing on medium speed until smooth.  Stir in apple, nuts and raisins.  Bake in greased and floured bundt pan 40-45 minutes or until wooden pick inserted in center comes out clean.  Cool in pan 10 minutes; remove to rack to cool completely. May be iced, glazed or do what I do and top with warm chunky applesauce!
