Apple Pecan Crisp

 

6 Cups Granny Smith Apples, sliced
⅓ cup white sugar
1 tablespoon flour
teaspoon cinnamon
teaspoon ginger
1 cup chopped pecans, divided
2 Tablespoons Lemon Juice

 

Crisp Topping:
cup flour
cup old fashioned oats
cup light brown sugar
cup sugar
teaspoon cinnamon
teaspoon nutmeg
cup butter, chopped into pieces
Oven: 350

 

Preheat oven. Lightly spray a 9x13 inch casserole dish with cooking spray. In a large bowl whisk together sugar, flour, cinnamon, ginger and cup pecans. Add the apples and coat. Add the lemon juice and toss until coated. Spread apples evenly in the dish.

To make the crumb topping: In a medium sized bowl mix flour, sugar, white sugar, cinnamon, and nutmeg into the bowl. Add the butter and using a pastry blender or fork mix until coarse crumbs form. Stir in cup pecans. Sprinkle on top of apples.

 

Bake for 40 minutes or until apples are tender and top is lightly brown.
