Banana Nut Bread
*Excellent basic recipe adaptable to zucchini, pumpkin or any squash.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 beaten eggs
1/2 cup vegetable oil
1 cup granulated sugar
1 cup pureed banana
1/2 cup chopped nuts
Oven:  350°

In large bowl, beat eggs with oil and sugar until smooth.  Sift dry ingredients together and blend in thoroughly.  Stir in fruit and nuts and bake in a greased loaf pan about 45 minutes.  Cool 10 minutes before removing from pan.
Makes 1 loaf.
