* This cake tends to be a rather dense and rich cake. Not very fluffy
but definitely full of flavor!
2 cups cake flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups granulated sugar
2/3 cups butter, softened
1 cup mashed ripe banana
1 teaspoon vanilla extract
1/3 cup buttermilk
2 bananas, peeled and sliced
2 cups very cold heavy cream, whipped, with sugar to taste
Stir together flour, baking powder, baking soda, and salt in medium bowl; set aside. Cream sugar and butter in large bowl until smooth. Beat in eggs, mashed bananas and vanilla. Add dry ingredients, blending well, then beat in buttermilk. Pour batter equally into two greased and floured 9-inch round cake pans. Bake approximately 35 minutes. Cool completely.
Frost first layer with whipped cream frosting, placing a single layer of banana slices on top. Then add second layer, frosting entire cake. Garnish with banana slices. Must be kept chilled.
