Buttermilk Biscuits

*The trick to this is keeping the dough sticky.  Too much handling is the main culprit in a tough biscuit.

2 cups sifted all-purpose flour
¼ cup butter softened
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
Buttermilk
Oven:  400°

Sift dry ingredients together into mixing bowl.  Cut in butter thoroughly.  Quickly stir in enough buttermilk to make very sticky dough.  Turn dough out onto well-floured surface and quickly knead about 15 strokes.  Pat, do not roll, dough out and cut as desired.  Place biscuits with sides touching into ungreased biscuit pan, pat tops with extra buttermilk and bake about 15 minutes.
