Soup Can Beef/Broccoli
1 pound lean beef cut into strips
1 tablespoon Canola oil
1 can condensed tomato soup
1/3 cup soy sauce
1 tablespoon cider vinegar
1 teaspoon minced garlic in oil
1/2 teaspoon crushed red pepper flakes
2 cups frozen broccoli/carrot medley, thawed
1/2 cup chopped onion
1/2 cup sliced mushrooms
4 cups cooked white rice

Brown beef in oil over medium high heat in skillet, adding onion and minced garlic when meat is halfway cooked.  Stir in soup, soy sauce, vinegar and pepper flakes.  Bring to a boil, add broccoli mixture and mushrooms, and then reduce to a simmer, cooking until vegetables are done.  Serve over hot cooked rice.  Serves 4 easily.
