Best Sugar Cookie
1 cup (2 sticks) butter, softened
1 cup granulated sugar
1 tablespoon vanilla
3 cups all-purpose flour
1/2 tsp baking soda
3/4 tsp salt
Cream butter in large bowl for 30 seconds. Add sugar and beat until smooth, Beat in egg and vanilla until light and creamy. Combine flour, baking powder and salt, adding to creamed mixture, mixing at medium speed of mixer until smooth. Cover dough and chill at least 1 hour. Shape dough into a long log, rolling on a sugared surface. Flatten ends and wrap log in wax paper, then wrap in plastic wrap and chill at least 3 hours. At this point you could freeze the dough for later use. Just be sure to move dough from freezer to refrigerator for several hours before baking. To bake, cut slices at least 1/4" thick and place on greased baking sheet (or one lined with parchment paper) 2 inches apart. Bake 10-12 minutes, or until edges are light brown. Cool slightly, then remove to racks. Yield: about 2 dozen.
