Coconut Butter Pecan Cupcakes

1 pkg commercial white layer cake mix
1/3 cup applesauce
1 1/4 cups water
3 whole eggs
1/2 cup chopped pecans (finely chopped)
1/3 cup coconut
Oven: 350°

Grease medium to jumbo cupcake tins (or insert muffin cups). In large mixing bowl combine all ingredients except nuts and coconut and mix on low speed for 30 seconds. Scrape bowl then beat ingredients another 2 minutes on medium speed. Stir in nuts and coconut. Fill muffin cups 2/3 full and bake 16-25 minutes or until cake springs back in center. Cool completely then dip each cupcake in Caramel Coconut Frosting. Makes about 24 medium cupcakes.
