Basic Cake Mix
1 ¾-cup shortening
3 ½ cups granulated sugar
5 ½ cups all-purpose flour
2 tablespoons baking powder
4 ½ teaspoons salt

In mixing bowl, cream shortening and sugar.  Combine flour, baking powder and salt; gradually add to creamed mixture until blended and crumbly.  Store in airtight container in cool dry place for up to 3 months.  Makes 11 cups, enough for 3 cakes.

White cake:

3 egg whites
¾ cup milk
1 teaspoon vanilla extract
3 ½ cups baking mix
Oven 350 °

In large mixing bowl, combine all ingredients and beat on medium speed of mixer for 2 minutes.  Pour into a greased 9-inch square baking pan and bake 35-40 minutes or until a toothpick inserted in the center comes out clean.  Cool completely on a wire rack before frosting.
