Fruit Chutney
*I always use peaches, although you can also use apples, nectarines or pears5 pounds peeled, pitted and chopped peaches
1 lemon, chopped
1 1/3 cups seedless raisins
1 cup chopped dates
3 cups granulated sugar
2 cups white vinegar
3/4 cups well-chopped pecans
1/2 cup crystallized ginger
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground clovesCombine peaches, lemon, raisins, dates, sugar and vinegar in canning kettle; bring to boil, reduce heat and simmer about 5 minutes or until fruit is softened. Add sugar, return to boil, reduce heat and simmer about 15 minutes or until thickened, stirring occasionally. Add remaining ingredients and cook an additional 5 minutes, stirring occasionally. Pack into hot jars allowing 1/2-inch headspace. Remove any bubbles, seal and process in boiling water bath for 10 minutes. Will make 8 half-pints.
