SUBSTITUTIONS FOR MISSING INGREDIENTS



 
 

FOR USE
1 cup regular milk 1 cup sour milk or buttermilk plus 1/2 tsp baking soda
1 cup canned tomatoes 1 1/3 cups cut up fresh, simmered 10 minutes
¾ cup cracker crumbs 1 cup bread crumbs
1cup molasses 1 cup honey
1 teaspoon dried herbs 1 tablespoon fresh
1 whole egg  2 egg yolks (for custards)
1 cup whole milk ½ cup evaporated with ½ cup water or 1 cup reconstituted nonfat dry with 1 tablespoon butter
1 package active dry yeast 2 ¼ teaspoons loose-pack or 1 cake compressed
1 small onion 1 tablespoon instant minced, reconstituted
1 tablespoon prepared mustard 1 teaspoon dry
1/8 teaspoon garlic powder 1 small pressed clove
1 tablespoon cornstarch 2 tablespoons flour
1 ounce baking chocolate 3 tablespoons dry cocoa with 1 tablespoon butter
1/4 cup red wine 1 tablespoon balsamic or red wine vinegar
Asiago Parmesan cheese
Sour cream/buttermilk Plain low-fat yogurt
Ricotta Cottage cheese
Linguine/Asian noodles Angel hair pasta
Fish sauce Worcestershire sauce
1 large egg white 3 tablespoons egg
1/8 teaspoon saffron 1/2 teaspoon turmeric
