Ranch Fried chicken 3 pounds fresh frying chicken, cut up
1 cup Ranch Dressing*
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon poultry seasoning
Vegetable oilAllow chicken pieces to soak in buttermilk for 1 hour or overnight. Combine flour, salt, pepper and poultry seasoning in large plastic bag. Shake excess milk off each piece and shake in bag to coat thoroughly. Lay each piece aside until all pieces are coated. Fill skillet about 1/3 full of oil, heating over medium heat. When oil is ready, coat the chicken a second time with flour mixture and immediately place into hot oil. Brown thoroughly on both sides, then cover pan and cook about 30 minutes, turning frequently to prevent scorching, or until chicken is fork tender. Drain well on paper toweling.
*If you don't have Ranch dressing, yogurt seasoned with dried herbs may be substituted.
