Caesar Chicken Salad

2 4-ounce skinned, boned chicken breast halves
1 tablespoon fresh lemon juice, divided
2 teaspoons low-sodium soy sauce
Cooking Spray
3 tablespoons light mayonnaise
2 tablespoons grated Parmesan cheese
1 teaspoon Dijon mustard
1/2 teaspoon anchovy paste
1/2 teaspoon mottled minced garlic
1/8 teaspoon black pepper
2 lettuce leaves, chopped
1 small tomato, chopped

Preheat broiler.  Combine the chicken with 2 teaspoons of juice and soy sauce and marinate in a sealed zip-top plastic bag in refrigerator for 30 minutes, turning bag once or twice.  Remove chicken, discarding liquid.  Place chicken on a broiler pan coated with cooking spray and broil for about 6 minutes each side or until cooked.  Cool and shred with forks.  Mix chicken with 1 teaspoon juice, mayonnaise and next 5 ingredients.  Toss with lettuce and tomato.  Use to fill pitas, tortilla wraps or sliced bread for sandwiches.
