Soup Can Chicken Dinner
*One of several recipes my sister found on soup cans!
Altered slightly to suit my family's tastes
1 pound boneless chicken thighs cut into cubes
1 tablespoon Canola oil
1 can condensed golden mushroom soup
3 tablespoons soy sauce
1 teaspoon minced garlic in oil
1 tablespoon minced parsley
1 16-ounce package frozen vegetable medley of choice
4 cups cooked wild rice
Over medium high heat, stir fry chicken in oil until cooked through. Stir in soup, soy sauce and garlic and bring to a boil; add vegetables, reduce heat and simmer until vegetables are done, stirring frequently. Serve over rice. Serves 4.
