English Crumb Cake

1 1/2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon butter, chilled
1 cup milk
1 large egg
2 teaspoons baking powder
1 tablespoon ground cinnamon
Oven:  350º

In a large bowl, blend together the flour and sugar.  Cream in butter until the mixture becomes fine and crumbly.  Set aside two tablespoons of this mixture.  To remaining mixture, add the milk, egg and baking powder.  Beat on high speed until smooth. Pour into lightly greased 9-inch square baking pan.  Stir cinnamon and reserved crumb mixture together and sprinkle evenly over top.  Bake in center of oven for 20 to 25 minutes, or until knife inserted in center comes out clean. Cool on wire rack for 5 minutes before cutting into squares.
