Healthy Fajitas
1 pound round steak, thawed
2 tablespoons mild chili seasoning
2 tablespoons or so worcestershire sauce
1 tablespoon your favorite hot sauce

1  onion, diced
1/2 large red sweet pepper, chopped
1/2 large yellow or green sweet pepper, chopped
2 ears precooked corn on the cob
1 clove garlic, minced
cracked black pepper
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh Italian parsley

8 ounces grated extra sharp cheddar cheese
12 soft corn tortillas
shredded lettuce
diced green onions
plain fat free yogurt (or sour cream)
jar of salsa (we use homemade)

 
Olive oil (do NOT use extra virgin)
Oven set to high broil

Combine the chili seasoning, chili powder, worcestershire and hot sauce until it makes a soft almost liquid paste. Thoroughly rub paste into both sides of steak, cover with plastic wrap and chill until time to cook.

When ready to prepare, lightly coat a broiler pan (I use an old cast iron grate from a small grill and set into a foil wrap broiler pan bottom so I get great grill marks!) and preheat pan in oven on medium high rack. Place steak onto hot pan and set timer for 5 minutes. Turn meat over and set timer for 5 more minutes and close oven door.

In the meantime, heat cast iron skillet with a light coating of olive oil. Add onions, garlic, peppers, corn and black pepper to taste. Saute until tender and beginning to caramelize and brown slightly. Stir in cilantro and parsley and set aside while preparing meat.   

When steak is done, remove to cutting board and allow to rest uncut for 5 more minutes. While waiting, dish up your cheese, etc. and wrap tortillas in paper towels and heat them in the microwave for about 1 1/2 minutes. Slice the steak into thin slices and place on serving tray.  Place all dishes on table and allow each person to make their own!
