Perfect Southern Fried Chicken
1 recipe Fried Chicken Rub
1/2 cup self rising flour
1/4 cup yellow cornmeal mix
1-2 large fresh eggs
Vegetable oil for frying
3-4 pounds fresh cut up frying chicken rinsed and patted dry with paper towels

Sprinkle Fried Chicken Rub over one side of chicken pieces. Gently massage in. Turn pieces over and repeat. Wrap chicken up in plastic wrap and chill for at least 2 hours prior to cooking.

To prepare, while oil in skillet is heating to medium-low heat, stir flour and cornmeal mix together on a paper plate or pie plate. Hand beat egg (use 2 if you need to) with a little water in a shallow dish.  Dredge each chicken piece lightly in flour mix, drench in the beaten egg, then dredge in dry mixture again. Gently shake off excess and lay on sheet of wax paper until all pieces are coated. Place chicken in preheated skillet and cook undisturbed for 4-7 minutes or until bottom shows signs of turning golden brown. Turn pieces and fry another 4-6 minutes. Remove from skillet to paper toweling, brown paper or a paper plate.
