1 pound lean ground beef
1 16-ounce can sloppy Joe sauce
2 small cans Mexican corn, drained
1 small can sliced black olives, drained
2 small cans sliced mushrooms, drained
Instant mashed potatoes
2 cups grated cheddar cheese
Brown the beef thoroughly; drain. Spread a few tablespoons of sloppy Joe sauce in bottom
of a 2-quart casserole dish. Spread meat over sauce, followed by remaining sauce, corn,
mushrooms and olives. Sprinkle half the cheese over this mixture. Prepare potatoes according
to package directions, beating in whole egg after mixing; spread over top of dish, sealing to edges.
Sprinkle with remaining cheese. Bake about 25 minutes or until hot, browned and bubbly. Serves 4 with leftovers.
