Lemon or Lime Spritz
2/3 cup granulated sugar
1 cup butter, softened
1/2 teaspoon salt
2 teaspoons lemon extract or lime extract
½ teaspoon grated lemon or lime peel
2 1/4 cups all-purpose flour, sifted
In mixing bowl combine sugar, butter, egg, salt, and flavoring. Beat on medium speed of mixer, scraping bowl often, until mixture is light and fluffy. Add flour and peel and beat at low speed, scraping bowl often, until well mixed. Cover and refrigerate at least 1 hour. Use a cookie press to form desired shapes 1 inch apart on cookie sheets. Bake 6 to 8 minutes or until edges are lightly browned.
