Mimi’s Fresh Apple Cake

3 eggs
1 1/4 cups vegetable oil
1/4 cup orange juice
2 cups granulated sugar
2 3/4 cups all-purpose flour
1/4 cup cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 cup grated coconut
1 cup chopped walnuts
2 cups chopped apple
Oven:  325°

In large mixing bowl beat together the eggs, oil, juice and sugar.  Sift dry ingredients together and add to egg mixture, blending thoroughly.  Stir in coconut, walnuts and apple.  Pour into greased and floured tube pan and bake for 80 minutes.  Cool in the pan for 1 hour.  Frost with Caramel Frosting.
