Old Fashioned Butter Mints
 This recipe requires two people!  Also requires a marble slab.

½ cup water
2 cups granulated sugar
4 tablespoons butter
5 drops oil of peppermint
Food coloring
Scissors

Set trays of ice on marble slab to chill completely. Bring water, sugar and butter to a rolling boil; reduce heat slightly and boil, without stirring, until syrup forms a hard lump when dropped into ice water.  Pour onto chilled marble slab; add oil of peppermint and few drops color.

The following must be done very rapidly or your lovely mints will quickly turn into a large lump of sugar!

With a helper, thoroughly butter your hands and fold product over and form a rope and pull quickly, twisting, folding over and twisting again into a long rope.  Quickly use scissors to snip into small pieces.  Allow to cool completely and store in an airtight container.
Makes 1 pound.
