Fried Okra ![]()
(guaranteed crispy fried okra!)2 cups sliced fresh okra pods
a little Milk with one egg, beaten together.
1/2 cup flour and 1/2 cup cornmeal - mixed together in a bowl.
Extra virgin olive oil
cast iron skilletPlace sliced okra in small bowl of the beaten liquid mixture. Turn to coat well.
Using your hands or a slotted spoon, dip out the okra putting it into the bowl of flour mixture. Coat well. Add just enough olive oil to coat the bottom of the skillet. Fry on medium to medium high heat. (Here's the secret: keep turning the slices) Drain on paper towels. Sprinkle with Sea Salt and/or Black Pepper, to taste, while still hot. Sea Salt greatly improves the flavor of Okra.
