Flaky Pie Pastry 1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup shortening
3 tablespoons ice waterSift flour and salt together into bowl. Cut in half the shortening with mixer until mixture resembles cornmeal. Cut in remaining shortening until mixture resembles small peas. Adding only 1 tablespoon of water at a time, work flour mixture into dough. (The idea is to use as little water as possible. Dough will be very stiff and flaky in appearance.) Shape into ball, flatten slightly on floured surface and roll out to fit pan. This recipe makes a single crust pastry. For double-crust pie, double the recipe.
