Oil Pie Pastry

 This recipe is very popular with commercial bakeries, as it is fast and easy to make.  Also very good for making turnovers or “fried pies”.

2 cups plain all-purpose flour
1 teaspoon salt
1/2 cup vegetable oil
5 tablespoons ice water
Waxed paper

Pour oil and water into a bowl – do not stir.  Sift flour and salt together in a mixing bowl and very quickly stir liquid into dry mixture, lightly shaping dough into two balls.  Flatten each ball slightly and roll out between two sheets of wax paper.  When circle of dough reaches edge of wax paper, it’s the right size!  Peel top sheet off dough, flip pastry over onto pie plate, adjust to fit, and carefully peel off second sheet of paper.  Fill as desired and repeat with top crust.
