Southern Peach Cobbler

Filling:
1/2 cup butter
1 1/2 cups granulated sugar
2 tablespoons flour
Pinch of salt
8 cups ripe peaches, peeled and sliced
1/2 cup of water

Crust:
1 cup all purpose flour
1/4 cup butter
1/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
Oven:  350º

To prepare the filling, melt the butter in a saucepan over medium heat. Stir in the sugar, flour, and salt; mix well. Then add the peaches and the water. Stir and heat thoroughly, about 5 minutes. Pour into a greased 9-by-9 inch casserole dish and set aside.

To prepare the crust, in a medium sized mixing bowl cream the butter with the sugar, then add the flour, baking powder, salt, and milk; mix well. Pour the batter over the peaches and bake for about 1 hour or until golden brown.
