Gloria’s Green Gelatin Salad
*Mother made this as a holiday side dish. Christmas wasn't
Christmas without it!
1 large box lime gelatin
1 large can crushed pineapple, juice reserved
Extra pineapple juice
3 ounces cream cheese, softened
1 cup crushed pecans
1/2 cup finely minced celery
Prepare gelatin according to label directions, substituting pineapple juice for water and cutting liquid amounts by half. Using a blender, blend a little juice and the hot gelatin with the cheese, processing until smooth, then pour into dish, stirring in nuts and celery. Chill overnight.
Note: For those who prefer a lighter desert salad, after chilling turn into large mixing bowl and beat in 1 small container non-dairy whipped topping.
