Peach Melba
  *Very strong peach flavor here - serve with ice cream

1/2 cup all-purpose flour
1/2 cup quick oats
1/4 cup granulated sugar
1/4 cup packed light brown sugar
3 tablespoons chilled butter
6 cups sliced peaches
2 teaspoons lemon juice
1 tablespoon granulated sugar
2 tablespoons cornstarch
Oven:  375º

Mix flour, oats, 1/4 cup granulated sugar and brown sugar in a bowl; cut in butter until mixture resembles meal.  Combine peaches, lemon juice, 1 tablespoon sugar and cornstarch in bowl; toss gently to thoroughly coat.  Spoon into 8-inch square greased casserole.  Sprinkle flour mixture over top.  Bake 30-45 minutes or until browned and bubbly.  Serves 6.
