Pumpkin Pie
  *I learned this one from my mother.  She was the first to help me discover the magical ways of condensed milk.

2 cups prepared pumpkin
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
2 beaten eggs
1 12-ounce can sweetened condensed milk
1 unbaked single crust pie shell
Oven:  425°

Place all ingredients into large bowl and beat until well blended, or process in blender.  Pour into pie shell and bake for 15 minutes.  Reduce heat to 350 and bake about 40 minutes until center is set.  Garnish with pecan halves, if desired.
