Chocolate Cream Pie

*Some might prefer to top with whipped cream after chilling rather than using meringue.

1 cup granulated sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
1/3 cup dry cocoa
2 cups whole milk
3 slightly beaten egg yolks
1 teaspoon vanilla
2 tablespoons butter
1 baked single pie shell
Meringue or whipped cream

In heavy saucepan, stir together sugar, flour, salt and cocoa.  Beat in cold milk and cook over medium high heat until thickened and bubbly, stirring constantly.  Cook 2 minutes, stirring constantly.  Remove from heat, stir moderate amount of mixture into egg yolks and return all to pan and return to heat.  Continue to cook another 2 minutes, stirring constantly.  Remove from heat; stir in vanilla and butter, and pour into pie shell.  Top with meringue, sealing edges.  Brown quickly under broiler and chill immediately for at least 4 hours.
