Fresh Strawberry Pie *I always loved Shoney’s® strawberry pie. Then I found a very close recipe!
2 quarts fresh berries, washed and hulled
1 cup water
1/3 cup water
1/4 cup cornstarch
1 cup granulated sugar
1 pre-baked 10” pie shell
Red food coloring
Whipped CreamMeasure out 1 cup of the berries and mash with 1 cup water in heavy saucepan. Bring to boil over high heat and cook for 5 minutes. Dissolve cornstarch in the 1/3 cup water and add with sugar to fruit/water mixture. Stirring constantly, boil for about 5 minutes until mixture “clears” and is thickened. Add few drops food coloring if desired. Set aside and allow to cool. Add remaining berries and toss gently to coat completely. Spoon into pie shell, filling evenly. Allow to chill at least 2 hours. Garnish with whipped cream before serving.
