Lemon Meringue Pie *Not your sweet but no flavor kind, this pie really packs a lemony taste!
1 1/2 cups granulated sugar
1/2 cup all-purpose flour
Dash salt
1 1/2 cups boiling water
3 beaten egg yolks
2 tablespoons butter
1/2 teaspoon grated lemon peel
1/3 cup lemon juice
2 teaspoons lemon extract
1 pre-baked pie shell
Meringue from 3 egg whitesIn heavy saucepan stir together the sugar, flour and salt and beat the boiling water into it. Cool over medium high heat until thickened and bubbly, stirring constantly. Reduce heat to medium and cook, stirring constantly, for 2 minutes. Remove from heat, stir moderate amount of mixture into egg yolks and return all to pan and return to heat. Continue to cook another 2 minutes, stirring constantly. Remove from heat and stir in butter and lemon peel. Slowly beat in juice and extract, mixing well. Tint if desired. Pour immediately into pie shell, seal with meringue and quickly brown under broiler. Chill immediately for at least 4 hours.
