Skillet Custard Pie
Found this recipe in Family Circle Magazine. It was originally written for blackberries but being surrounded by
peach country, am going to be making alot of peach versions!
Directions
- 1 tablespoon unsalted butter
- 1 1/2 cups milk
- 2/3 cup all-purpose flour
- 1/3 cup plus 2 tbsp granulated sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 cups fresh sliced fruit or berries (do NOT use frozen fruit for this recipe)
- Confectioners' sugar, for dusting
- Oven: 350º
- Heat oven to 350 degrees . Thoroughly butter a 12-inch cast-iron skillet.
- In a blender, combine milk, flour, 1/3 cup sugar, the eggs, vanilla and salt. Pour batter into skillet. Scatter berries on top, then sprinkle with 2 tbsp sugar.
- Bake 40 minutes, until puffed and a knife inserted in center comes out clean. Serve warm, dusted with confectioners' sugar.
