Peanut Brittle 2 cups granulated sugar
1/2 cup water
1 cup dark corn syrup
2 cups raw shelled peanuts
2 tablespoons butter
1 teaspoon baking sodaCombine sugar, water and corn syrup in heavy saucepan with high sides. Bring to full rolling boil and allow mixture to cook until mixture reaches 170º on a candy thermometer. Add the peanuts and continue boiling, stirring constantly, until candy reaches 300º. Remove from heat, ad butter and soda and beat until foamy. Pour immediately onto a lightly buttered sheet pan. When cool enough to hold together, lift sheet of candy and turn over. When completely cold, break into pieces and store in airtight containers. Will make about 1 pound candy.
