Potato Pancakes

Cleanly scrubbed Irish potatoes with peelings attached
2 eggs
1 1/2 teaspoons salt
Pepper to taste
2 tablespoons all-purpose flour

Cut potatoes in quarters; grate into water to prevent over browning.  Beat eggs with seasonings and flour.  Drain potatoes and add to mixture.  Drop by spoonfuls onto a hot griddle.  Cook until browned, turning once.  Will make 6 servings.
