1 pound lean beef, sliced into thin strips
1 each large green, red and yellow bell pepper, cut into strips
1 medium onion, coarsely chopped
1 small clove garlic
½ cup brown sugar
½ cup cider vinegar
¼ cup soy sauce added to ¾ cup water
3 tablespoons cornstarch
Hot cooked rice
Heat wok with 3 tablespoons olive oil over medium high heat. Crush garlic and sauté in oil until almost browned. Remove garlic pieces and discard. Stir-fry beef until browned, add vegetables; sauté until crisp/tender. In bowl combine the sugar, vinegar, soy sauce, water and cornstarch, beating until cornstarch is dissolved. Quickly add to wok, stirring thoroughly. Reduce heat to simmer, cover and allow to cook until meat is tender and sauce is thickened, adding more water as needed. Serve over hot rice.
