Pumpkin Rolls *Don’t let the name fool you. These are marvelous dinner rolls!
All-purpose flour, sifted
1 package or 2 1/4 teaspoons active dry yeast
2 teaspoons salt
1/4 cup granulated sugar
1 1/4 cups whole milk
1/4 cup shortening
1 beaten egg
1/2 cup cooked pumpkin
Oven: 400°Stir 2 cups flour together with yeast in mixing bowl. Heat milk, sugar, salt and shortening just until shortening begins to melt. Cool to lukewarm. Add egg and pumpkin to flour mixture along with liquids. Beat on medium speed of mixer 3 minutes. Add enough remaining flour to make a very soft but workable dough. Shape into ball; place in greased bowl, turning once to coat. Place covered bowl in refrigerator and chill at least two hours or overnight. Shape into 16 balls and bake in a greased biscuit pan about 15 minutes.
