Craig Family Potato Salad

6 medium potatoes, cooked, peeled and cubed
1 large sweet onion, chopped
4 large hard-boiled eggs, peeled and cubed (optional)
1 cup sweet or dill pickle relish
1 cup mayonnaise
3 tablespoon prepared mustard (I use Spicy Brown Mustard)
Salt and pepper to taste

Combine the relish with mayonnaise, mustard, salt and pepper.  Gently toss the potatoes, onion and eggs into mixture.  Garnish with paprika and chill.
