Sweet Macaroni Salad 8 ounces elbow macaroni, cooked according to pkg directions, drained & rinsed
2 medium carrots, shredded
1/2 large sweet bell pepper, chopped
1/2 medium red onion, chopped
1 cup mayonnaise
7 ounces sweetened condensed milk
1/2 cup granulated sugar
1/2 cup cider vinegar
1/2 teaspoon salt
1/4 teaspoon ground black pepperIn large serving bowl, combine the macaroni, carrots, green pepper and onion. In a small bowl, whisk the mayonnaise, milk, sugar, vinegar, salt and pepper until smooth. Pour over macaroni mixture and toss to coat. Cover and refrigerate overnight, stirring occasionally. Serves 6-7.
