Ham Roasted with Ginger-Pineapple-Honey Marinade

Large fresh shank portion ham
1 cup pureed pineapple (I use the canned chunk pineapple but you could puree fresh also)
1/2 cup honey
2 tablespoons olive oil 
1 tablespoon finely grated fresh ginger root

Stir together thoroughly.  Makes 1 1/2 cups marinade.  Place ham in pan skin side up. Make cross cuts in skin and rub the marinade in thoroughly. Allow to rest in refrigerator 12 hours before roasting. Cover with foil and roast at 350 degrees until meat thermometer reads 170 degrees. Remove foil and roast an additional 30-45 minutes until browned. Be sure to baste with juices occasionally.
