Lemon-Herb Marinade

2 tablespoons grated lemon peel
2 cups lemon juice
3/4 cup chopped fresh mint or 1/4 cup dried
3/4 cup chopped fresh basil or 1/4 cup dried
3/4 cup white vinegar or wine vinegar
1/3 cup chopped fresh oregano or 3 tablespoons dried
1/4 cup olive oil
3/4 teaspoon salt
6 garlic cloves, crushed (or 3 teaspoons bottled minced)

Place all ingredients in blender and process thoroughly.  Store in airtight bottle.  Makes about 3 3/4 cups.  Use to marinate chicken or fish before grilling or roasting.
