Lime-Pepper Marinade for Seafood

1 cup thawed orange juice concentrate
2 teaspoons grated lime rind
1/2 cup fresh lime juice
1/2 cup honey
1 tablespoon cumin
1/2 teaspoon salt
6 garlic cloves, crushed (or 3 teaspoons bottled minced)
1 sweet red bell pepper, seeded and chopped

Process in food processor or blender.  May be stored in airtight bottle. Makes 2 2/3 cups Marinade.  For those who like it spicy, substitute 4 small jalapeno peppers, seeded for the sweet red bell pepper.
