2 1/2 c all purpose flour
1 1/2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1 c applesauce
3/4 c sugar 3/4 c brown sugar, lightly packed
1 tsp vanilla extract
½ cup chopped nuts of choice (I used slivered almonds!)
3 c oats, uncooked
1 pkg butterscotch morsels
In a small bowl combine flour, soda, salt & cinnamon. Set aside. In a large bowl combine applesauce, sugars, eggs & vanilla extract; beat until creamy. Gradually add flour mixture, mix until well blended then continue to mix adding oats, nuts and morsels. Drop by tablespoonfuls onto ungreased cookie sheet. Bake 7-8 min. for chewy cookies, 9-10 min. for crunchy.
Alternately: spray 9” x 13” baking dish with cooking spray and press mixture into pan evenly. Bake 20-25 minutes until set and browned at edges. Cool and cut into bars.
