*Although this is technically an appetizer, on the coast of North Carolina it became such a popular item, it was often eaten as a main dish!
1 pound peeled, cooked, minced shrimp
1 onion, minced
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 beaten eggs
Combine all ingredients with just enough milk to make a batter resembling hush puppies. Deep-fry as you would hushpuppies and drain on paper toweling or in colander.
