1 cup water
½ cup butter
1 cup all-purpose flour
4 eggs, beaten
1 cup sharp cheddar cheese, grated
Bring water and butter to a full boil over medium heat. Quickly beat in flour, stirring until a ball is formed. Remove from heat; add eggs slowly, beating well after each addition. Stir in the cheese and drop mixture by teaspoonfuls (they GROW) onto a greased cookie sheet 1 ½ inches apart. Bake about 20 minutes, then pierce each puff a couple of times and return oven with heat turned off for another 5 minutes. Will make about 3 dozen.
