Potato Soup 6 good sized potatoes, peeled, rinsed and cubed
3 carrots, peeled and minced
1 large onion, peeled and minced
1/4 cup butter
3 tablespoons parsley
4 cups whole milk
1/4 cup flour
Salt and pepper to tastePlace potatoes in large pot with enough water to cover by 2 inches. Bring to boil and cook until almost tender. Drain but reserve liquid. Add to pot the carrots, onion, butter, parsley and seasoning. Dissolve flour in milk and add to pot. Add enough reserved liquid to completely cover vegetables by 1 inch at least. Return to boil, reduce heat and allow to simmer until vegetables are tender and soup has thickened slightly, stirring occasionally.
