Stevia Angel Food Cake
1 cup sifted cake flour
Stevia substitute equivilent for 1.5 cups sugar**
1/2 teaspoons salt
12 egg whites
1 tsp cream of Tartar
1 tsp vanilla extract
** The Stevia packets are equal to 2 teaspoons sugar each, so 6 would equal ¼ cup, 12 equal ½ cup and 24 equal 1 cup. We use the packets ONLY because the bulk bags/boxes contain maltodextrin which is known to raise blood sugar.
Sift flour, salt and stevia together. Set aside. Beat remaining ingredients until soft peaks form. Reduce mixing speed. Sift a small amount of the dry mixture over the whipped eggs. Fold gently. Continue sifting and folding until all the flour mixture is incorporated to the wet. Gently pour batter into a greased 10 inch pan. Bake for 35-40 minutes (or until toothpick inserted comes out clean). Cool 10 minutes on rack in pan, then invert pan and cool completely.
