Strawberry Fig Preserves

6 cups mashed fresh figs
3 cups granulated sugar
2 3-ounce packages strawberry gelatin

Stir figs with sugar in heavy pot over medium heat until mixture begins to boil.  Cook, stirring constantly, for two minutes, then gradually stir in gelatin powder and continue cooking another 15 minutes, stirring constantly.  Fill jars leaving 1/2-inch headspace, seal and process in boiling water bath 5 minutes.
Will yield 8 half-pints.
