Salt-Water Taffy
*Another legacy from my time on the Carolina coast.1 cup light corn syrup
2 cups granulated sugar
1 1/2 teaspoons salt
1 cup water
2 tablespoons butter
1/4 teaspoon desired flavored oil (I use oil of peppermint or cinnamon)
Few drops food coloringIn a heavy 2-quart saucepot, combine the syrup, sugar, salt and water, cooking over medium heat, stirring constantly until sugar dissolves. Bring to boil and cook to hard ball stage (265º) without stirring. Remove from heat; add remaining ingredients and pour into a butter pan to cool until easily handled. With well-buttered hands, form into a ball and pull candy until light in color and becomes difficult to pull. Cut into quarters and pull each into a long 1/2-inch rope. Cut quickly with buttered scissors and wrap individually in waxed paper. Will make about 20 ounces of taffy.
